Pickled Deviled eggs

I'm always looking at ways to add probiotics to my diet and I have to admit that pickles are my favorite probiotic! You can definitely make this recipe with regular pickles or even without them. Add an olive on top or even some hot sauce. This recipe is easy to modify.

Pickled deviled eggs with probiotics

Ingredients

  • 12 Eggs
  • ½ cup Mayonnaise
  • 2 tbsp. Pickle juice
  • 1 Pickle cut into small chunks to garnish
  • Salt
  • Pepper

Instructions

  • Put the eggs in a pot and cover with water.
  • Bring the water to a boil and cook the eggs for about 10 minutes.
  • Empty the water from the pot and fill the pot with very cold water. Let cool for 10 minutes.
  • Remove the shell from the egg.
  • Cut the eggs in half and put the yolks in a bowl.
  • Using a fork, crush the yolks.
  • Add mayo, pickle juice, salt, pepper and mix.
  • Fill the eggs with the mixture.
  • Garnish with the pickles.

Notes

*The pickles must be fermented to get the probiotics.
